Grandmother Verguny (lush brushwood) on kefir

Verguny (lush brushwood) is a dish of Ukrainian cuisine, somewhat similar to pancakes. Lush dough on kefir, the minimum available products - and a mountain of delicious pastries on your table.

Baking, although not expensive, but it turns out very tender and soft. The Russian version of such baking contains alcohol (vodka or rum), so that the baking is as crisp as possible. Both that and that option of brushwood is good.

Time for preparing - 25 minutes

Ingredients for the preparation of brushwood on kefir:

  • Flour - 3-4 tbsp.
  • Kefir - 300-400 ml.
  • Eggs - 1 pc.
  • Salt - a pinch
  • Sugar - 3 tbsp. l
  • Baking powder - 1 tsp.
  • Vegetable oil - 70-100 ml
  • Icing sugar - for sprinkling.

Step cooking:

Both kefir and eggs should be at room temperature, so we get them out of the refrigerator in advance. Sift flour 2-3 times with baking powder, pour salt and sugar, drive in an egg. Mix the ingredients.

Kefir is slightly warmed, pour into the dough. Do not add all the kefir immediately, look at the dough. You may need more or less liquid, it all depends on the quality of the flour. Kefir choose fat content of 3.2%. If it was not at hand, take sour milk. The result is also delicious.

Knead a not thick slightly sticky dough. For convenience, grease your hands with vegetable oil. Cover with a deep bowl and let stand for 15-30 minutes.

Sprinkle the cutting board and rolling pin with flour and roll out the dough half a centimeter thick or more. So the finished brushwood will be magnificent. If it is rolled thinner, the dough will come out dry.

Cut the dough into rectangles, and with a sharp knife make an incision in the center of the rectangle. Turn out half of the brushwood through this hole so that flagella are formed on both sides. Do this with all the blanks.

In a deep frying pan, heat the vegetable oil. We spread brushwood at a distance from each other. Fry on both sides to brownish-golden color.

We spread brushwood on a paper towel so that it absorbs the remaining fat.

After complete cooling, sprinkle baking powdered sugar. Serve with warm milk and honey or hot cocoa and raspberry jam.
