But it is not always possible to eat it in plenty during the ripening season, so all kinds of goodies for the winter are made from blueberries: jam, jams, compotes. But during heat treatment, some of the nutrients are destroyed, so the so-called "raw jams" are so popular today. So, now we will prepare pureed blueberries with sugar.

In addition to various vitamins and microelements, the composition of the berry includes pectin, which has gelling properties, so that blueberries mashed with sugar turn out to be thick and excellent pies, desserts and other goodies come out of it.

The method of making jam without boiling from this berry is particularly light and non-painstaking.

Unlike other berries, blueberries do not need long peeling, removing tails and leaves, twigs. It is enough to put it in a colander and rinse. Next, blueberries are crushed in any convenient way, and for "raw jam" metal objects are not recommended, so a wooden crush or a plastic blender nozzle will be the best option.

After the rubbed blueberries are mixed with sugar, aged for some time until all the grains are completely dissolved and rolled up. That's it, the mashed blueberries with sugar are ready.

But you can use not only blueberries and sugar to make a healthy dessert, but also additional ingredients, such as berries and even fruits. Blueberries go well with almost any berries, whether they are sour or sweet: raspberries, strawberries, strawberries, cherries, gooseberries and others. Recipe 1. Rubbed blueberries with sugar for the winter without cooking

Ingredients:

• two kilograms of berries;

• 2.5-3 kilograms of granulated sugar.

Cooking method:

1. Thoroughly sort through the blueberries, rinse them, laying them in a colander. Leave for a while in a colander to let the glass water.

2. Pour the blueberries into a deep bowl, mash the fruits with a potato nibbler, or chop them with an immersion blender. You can also twist the berries in a meat grinder.

3. Pour a kilogram of sugar to the blueberries. Leave for 30-40 minutes to let the berry let the juice.

4. Pour another kilogram of sugar, mix. Let it stand for another 20 minutes.

5. While the blueberries are standing, take care of the banks. Rinse them with soda, sterilize by putting them on the wire rack in the oven or in a water bath.

6. Carefully transfer the blueberries rubbed with sugar into jars, sprinkle on top with a layer of sugar about two centimeters thick.

7. Roll up the cans with tin lids or tightly cover with ordinary plastic lids.

8. No need to turn over the container with jam; store the product in the refrigerator or in a darkened cool place.

Recipe 2. Rubbed blueberry jelly with sugar for the winter without cooking

Ingredients:

• 600 grams of blueberries;

• 700 ml of water;

• 3 tbsp. l gelatin;

• 3 tbsp. l strong vermouth or gin;

• 300 grams of granulated sugar.

Cooking method:

1. Put washed and dried blueberries in a bowl, rub it with a blender.

2. Sprinkle the berry with a little sugar, set aside for 20 minutes.

3. Boil water, cool to room temperature. Pour gelatin into the water, let it swell. Shuffle.

4. Add gin and the remaining sugar to the gelatin mass. Stir until all sugar grains are completely dissolved.

5. Mix the mashed blueberries with a gelatinous mass, put in the refrigerator until the jelly is completely frozen.

6. Following the same instructions, you can prepare jelly in layers from a mixture of whole berries and mashed blueberries with sugar mixed with a gelatinous mass.

7. The dessert is especially tasty with soft cottage cheese, unsweetened yogurt, whipped cream.

Recipe 3. Rubbed blueberries with strawberries and sugar for the winter without cooking

Ingredients:

• two kg of sugar;

• some powdered sugar;

• one kg of wild strawberry;

• one kg of fresh blueberries.

Cooking method:

1. Sort blueberries thoroughly, rinse under running water. Remove the leaves from the strawberries, rinse them, putting them in a colander.

2. Pass both types of berries through a meat grinder, sprinkle with sugar, remove for a couple of hours in the refrigerator.

3. When the sugar has completely dissolved in berry juice, mix the mass especially carefully, and then transfer it to previously prepared sterilized jars. Sprinkle a thin layer of powdered sugar on top, cover with plastic covers.

Ingredients:

• 700 grams of blueberries;

• 500 grams of black currant;

• 1.5 kg of sugar.

Cooking method:

1. Sort the blueberries and currants, remove all the leaves, tear the tails from the currant, remove the spoiled berries.

2. Put everything in a colander, rinse with cold water. After the water drains, pour all the berries on a towel to dry.

3. Transfer the currants and blueberries into a deep bowl, pour sugar on top. Grind everything with a blender.

4. Allow the mass to infuse for about an hour, then mix and place in a sterile container. Roll up.

Ingredients:

• 500 grams of blueberries;

• 500 grams of ripe gooseberries;

• kilogram of sugar;

• 200 ml of water.

Cooking method:

1. Sort and rinse the berries. Cut ponytails from gooseberries.

2. Put blueberries with gooseberries in a blender bowl, chop.

3. Pour sugar into the pan, pour water. Bring the mass to a boil, keep in mind that the syrup is thick, so that it does not burn, you need to mix it continuously.

Ingredients:

• two glasses of blueberries;

• 100 ml of water;

• three tablespoons of honey;

• half a glass of sugar;

• half a glass of walnuts.

Cooking method:

1. Rinse the berries well, after they dry a little, put in a blender bowl and chop.

2. Heat the honey in a water bath so that it becomes thin, then cool.

3. Put the peeled walnuts in a dry pan, lightly fry until a light golden hue.

4. Dilute sugar in heated water. When the mixture cools down, put honey here, mix.

Ingredients:

• a pound of mashed blueberries with sugar;

• 800 grams of flour;

• a glass of sugar;

• a pack of sweet cream butter;

• three eggs;

• two teaspoons of baking powder.

Cooking method:

1. Sift flour into a deep bowl, add baking powder, mix.

2. In another bowl, beat the sugar granulated eggs.

3. Melt the sweet cream butter and add to the beaten eggs in the cooled form, mix.

4. Add the sifted flour to the eggs and butter in small portions, knead the viscous dough.
