The liver is an incredibly healthy and tasty product that can be prepared in a variety of ways. Especially good snacks: light, simple, but very aromatic and even unusual.

Liver appetizer - general principles of preparation

For snacks, you can use any kind of liver, but beef offal is especially appreciated. Chicken liver is the most tender, but has an irregular shape. Because of this, it is difficult to cut into neat straws or cubes. But for twisted dishes, it is great. The cheapest pork liver, but it has an unpleasant bitterness. Therefore, it is advisable to soak the pieces in milk before use. Beef liver is also sometimes soaked to improve taste.

What are liver snacks prepared with:

• different types of vegetables;

• eggs;

• cheese of various types;

• mushrooms.

The addition of spices, garlic, various herbs, with which the liver goes well, is welcome. All snacks are intended for direct consumption and are not stored for a long time, a maximum of 2-3 days in the refrigerator.

Spicy liver appetizer with onions and cucumbers

A variant of a very tasty and interesting liver appetizer with spicy dressing. Ideal for a festive table. If desired, part of the pickles can be replaced with mushrooms. It also turns out to be very interesting with them.

Ingredients

• 400 g of the liver;

• 3 pickles;

• 2 onion heads;

• 4 tbsp. l oils;

• a spoon of vinegar;

• 1 tsp mustard;

• salt pepper.

Cooking

1. Rinse the liver, cut into several pieces, put in boiling water and boil for 15 minutes, then remove, cool. It is best to cook such an appetizer from beef or pork liver, since the chicken can’t be cut beautifully.

2. Cut the onions in half rings, put in a colander, pour over boiling water. This is necessary to get rid of bitterness. Add a bite to the onion, stir, let it marinate.

3. Straw the cucumbers, you can use salted or pickled vegetables, but the taste will be different.

4. Cut the boiled liver into strips.

5. Connect all the products. Add onion marinated in vinegar. Stir.

6. Combine vegetable oil with mustard and spices. For a very savory snack, you can add more mustard. Also, if it is purchased and not too vigorous, we put a double norm. Grind the products until smooth.

7. Pour the sauce into a snack, stir, put in a container and tamp a little. Refrigerate for a couple of hours.

Egg liver appetizer

The recipe for delicious and satisfying stuffed eggs. For such an appetizer, the liver needs a little. You can use chicken offal.

Ingredients

• a dozen eggs;

• 50 mayonnaise or sour cream;

• 200 g of the liver;

• clove of garlic;

• spices.

Cooking

1. The liver for this snack can be boiled or fried in a pan. Cooking in any way, cool.

2. Twist the slices or grind with a blender, add mayonnaise and sour cream, pepper and salt, squeeze the garlic, mix thoroughly until smooth.

3. We clean boiled eggs. Cut in half. We do this carefully so as not to damage the protein. We remove the yolks. They can be crushed and added to the liver or used for other purposes.

4. We fill the egg halves with the liver mass, put it on the dish, decorate with fresh herbs.

Korean liver appetizer with carrots

A variant of a very aromatic Korean liver appetizer. Salad seasonings will be required, but you can collect them yourself. To do this, mix different types of pepper, coriander, sweet paprika, saffron and other spices at your discretion.

Ingredients

• 2 carrots;

• 80 ml of oil;

• 2 cloves of garlic;

• 1 tsp Korean spices;

• 300 g of the liver;

• 2 tsp vinegar

• 1 tsp Sahara;

• 30 ml of soy sauce.

Cooking

1. Grate carrots with large strips, as for Korean salads. Sprinkle with vinegar. Add sugar, season with spices and mash with hands, let it marinate.

2. Squeeze the garlic on top of the carrots, but do not stir.

3. Cut the liver into long strips. Well, if it is frostbitten. If necessary, can be soaked in milk.

4. Heat the oil in a wide skillet, put the slices and fry on medium heat over readiness. It does not take much time.

5. At the end, add soy sauce to the liver. Warm up a minute. Now we make sure that nothing burns, since the sauce has a tendency to this.

6. Remove the liver from the heat and transfer to the carrots with garlic. Quickly stir and cover the dish so that the aromas do not disappear.

7. Let the appetizer stand for about half an hour, then put it in the refrigerator for a couple of hours.

Liver appetizer with cheese and garlic

The whole charm of this snack from the liver is versatility. It can be used as a spread for sandwiches, egg fillings or pita roll, and put into tartlets. You can use any cheese. If the product is processed, the amount of mayonnaise will have to be slightly reduced.

Ingredients

• 350 grams of liver;

• 150 grams of mayonnaise;

• three cloves of garlic;

• onion head;

• two tablespoons of oil;

• 160 grams of cheese;

• herbs, spices.

Cooking

1. Cut onion, fry in oil until soft. Strong fire do not. Add chopped garlic at the end, stir and turn off.

2. The liver can be simply boiled or fried in oil for this recipe, but not very browned. Then cool the pieces. Twist through a meat grinder along with onions and garlic.

3. Grate the cheese finely, shift to the liver.

4. Chop greens, pour over. Pepper and salt to taste.

5. Add mayonnaise for viscosity. Similarly, you can use sour cream. For diet recipes, white yogurt is suitable.

6. Mix the appetizer, use for different dishes and sandwiches. Store in a refrigerator in a sealed container for no more than two days.

Liver roll appetizer

A variant of a delicious liver roll appetizer, it is better to use beef offal. Cheese for filling needs soft.

Ingredients

• 1 kg of beef liver;

• 200 g of oil;

• 2 onions;

• carrot;

• 150 g of cheese;

• 3 cloves of garlic;

• spices, herbs.

Cooking

1. Boil until cooked liver, cut into pieces, remove from broth, cool.

2. Cut onions with carrots, put in a frying pan with a small amount of oil and fry until soft. The rest of the oil is kept in a warm place so that it does not freeze.

3. Twist the liver with a third of the fried vegetables through a meat grinder.

4. Add butter, spices to the liver. Stir the mass until a homogeneous paste.

5. Spread a layer of liver on a sheet of foil or on parchment paper.

6. Cover with a second sheet of paper or parchment, roll it through it with a rolling pin so that the layer is even and dense. We clean for 20 minutes in the freezer.

7. Grind the garlic.

8. We get the blank for the roll. We remove the top layer of foil or parchment, grease the liver with cream cheese.

9. Sprinkle the top with garlic and vegetables that remain.

10. Twist the roll, wrap it with foil and put it in the refrigerator for a couple of hours, let it get stronger. When serving, cut into slices across.

Mushroom liver appetizer

A variant of a wonderful festive champignon snack. We choose the most even and beautiful mushrooms with large hats.

Ingredients

• 10 champignons;

• onion;

• 150 g of the liver;

• mayonnaise or sour cream;

• butter;

• 50 g of cheese;

• clove of garlic;

• some greens.

Cooking

1. Carefully remove the legs from the champignons. Season the hats with spices, grease with mayonnaise or sour cream, put in the oven and bake at 200 degrees for a quarter of an hour.

2. Cut onions and mushroom legs, put in a frying pan, fry for three minutes.

3. Dice the liver, add to the pan and bring to onion with onions and mushrooms. Cool.

4. Grind the liver mass, add chopped garlic.

5. Grate the cheese, put in the filling. Salt, pepper, add as much mayonnaise to make a paste.

6. Remove the cooked hats from the oven and cool.

7. Fill the champignons with filling, decorate with herbs and the liver appetizer is ready!

Liver appetizer "Rolls with filling"

The recipe is another wonderful rolls, but they are baked from liver pancakes. Inside, you can lay absolutely any products, here cheese with eggs and mayonnaise.

Ingredients

• 400 g of the liver;

• 2 eggs;

• 3 tbsp. l flour;

• spices.

For filling:

• three eggs;

• 200 g of cheese (we take absolutely any);

• clove of garlic;

• greens and mayonnaise.

Cooking

1. Grind the liver, add eggs, salt and shake the mass well. Add flour, stir the resulting dough.

2. Heat the pan, grease, pour a little dough and flatten. Oven is not a thick pancake. As soon as it is browned, turn over.

3. From this amount of dough, 3-4 pancakes will turn out, depending on the width of the pan. Naturally, there will be as many rolls.

4. We grate boiled eggs, chop cheese, herbs, add garlic to taste, various spices. Stir and gently season the filling with mayonnaise. It is important that it does not turn out liquid.

5. We spread a little cheese mass on a pancake, spread it, roll the roll. We do the same with the rest of the liver cakes.

6. Put the rolls in the refrigerator for an hour. Let them soak, get stronger. Before serving, the appetizer needs to be cut into small pieces.

Liver appetizer - useful tips and tricks

• No milk to soak the liver? You can use cooled black tea and even with sugar. The taste of the product from this will only improve.

• If you need to fry the liver until golden brown, you can first roll the pieces in flour or add a little soy sauce at the very end.

• When frying large pieces or plates of liver, you must first beat off the product with a hammer. Then he will definitely turn out gentle.

• The liver loves various spices and can be safely added when boiling the product. Bay leaf, greens, peppercorns, carrots and onions in the broth will definitely not be superfluous.
